1/2 cup softened butter
1/2 cup white sugar
1/2 cup brown sugar
2 tsp vanilla extract
2 eggs
2 1/4 cup flour
1tsp baking soda
1/2 tsp salt
1 1/2 cup semi-sweet chocolate chips
1 1/2 cup flaked coconut
1 cup walnut pieces
Preheat the oven to 375 F, line a baking sheet with parchment, or cooking spray
Using a mixer, cream the butter, white sugar, brown sugar, vanilla, and eggs
In another bowl, mix the flour, baking soda, and salt together thoroughly. Slowly add the dry mix to the egg mix until well blended. Add the chocolate chips, coconut, and walnuts then mix.
Drop rounded spoonfuls onto the cookie sheet, about 1-2 inches apart
Bake for 8-10 minutes or until golden brown. Allow them to cool before moving to a wire rack.
Enjoy once cooled.

Sprinkle before baking: ½ cup semi-sweet dark chocolate chips (Optional)
Preheat the oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square baking dish.
Combine beans, sugar, cocoa powder, eggs, oil, instant coffee, vanilla, and salt in a blender; blend until smooth.
Pour into a greased baking dish (you can use shortening or butter based on your dietary needs). Sprinkle chocolate chips and/or walnuts over the surface.
Let cool to room temperature before cutting into 16 squares. Enjoy!
